While little English Whisky is peated in the traditional manner used in Scotland, various other methods are used by English Distilleries to achieve flavours that echo the style in varying degrees of intensity.
1). Peated barley is used by some distilleries, for example, White Peak Distillery who go for a lightly peated style but using this method. Retribution Distilling use local peat.
2). Casks that have previously held peated whisky. This adds a smoky element to the finished whisky. The intensity of smokiness depends on which whisky was in the cask previously and how long the new whisky is left in the cask to mature.
