Bimber makes exceptional quality single malt whiskies. They grow 100% of their barley on their farm - after harvesting, it is traditionally floor malted, hand-mashed and fermented slowly for seven days in hand-made wooden washbacks. Distillation is in small copper pot stills, followed by maturation in carefully selected casks before bottling on site at the distillery. The limited runs tend to sell out very fast indeed.
